Salads.....or not. Greens are still
the healthiest choice to eat! Some salads can get fattening depending on
your choice of toppers! But without the tasty dressing, a salad can be a
bit boring and taste-less. Here is a salad that I cooked up
yesterday...I love it, and it is full of taste...without all the
preservatives, fats and additives that you get with dressings.
Ingredients:3 small mini eggplants (the Italian ones)
1/2 bread crumbs or panko
1 Romain lettuce
1 cucumber
1 tomato
1/4 red grapes sliced in half
First, Dice up the baby eggplants. (ooh, they are so cute) leave skin on . Place in skillet in 1/4 olive oil. Saute until tender. Throw in bread crumbs over eggplant, fry until brown. Remove from heat into plate.
wash 1 cup of roman lettuce. Chop-up cucumber. Slice up tomato or use cherry tomatoes. Half- up the red grapes/I love the Black Grapes! (see in pic)
Place in a bowl or flat dish.
** Throw eggplant on top...., Drizzle a bit more olive oil, fresh squeezed lemon and lime juice for a healthy dressing topper.... ENJOY!
